What EHO inspectors actually look at (and how to be ready)

Environmental Health Officers are not trying to catch you out — they're trying to determine your food hygiene rating in an hour. The faster you can produce the records they need, the higher your rating tends to be. Not because inspectors reward speed, but because operators with organised records tend to have organised kitchens.

The three things they ask for first

1) Your HACCP plan (the document, not the vibe). 2) Temperature records for the last 4 weeks. 3) Cleaning schedule sign-off for the last 2 weeks. Producing these in under 5 minutes is the single strongest signal that your kitchen is well-run. Producing them in 45 minutes with pages missing is the strongest signal that something is off.

Allergen management — the modern focus area

Since Natasha's Law, inspectors give allergen management a disproportionate share of attention. Expect them to test staff knowledge (ask a KP what to do if a customer declares a nut allergy), test process (pick a menu item and trace its allergen path from delivery to plate), and test documentation (produce the allergen matrix for the current menu). Digital allergen matrices with change history beat printed ones every time.

The five records that determine your rating

Structural: cleaning schedule and pest control. Hygiene: temperature records and staff training. Confidence in management: the HACCP plan itself and evidence that it's reviewed. If any of these five are weak, the rating drops. If all five are strong, a rating of 5 is essentially guaranteed absent a structural surprise.

What NOT to say

Don't volunteer information the inspector didn't ask for. Don't argue about the last inspection. Don't blame a supplier — the responsibility for what you serve is yours. Answer the question asked, produce the record requested, and let the visit run its course. Inspectors are experienced enough to spot both defensiveness and over-eagerness.
