The opening and closing checklist every venue underestimates

Opening and closing checks are the humblest part of hospitality operations and the highest-leverage. A missed cellar temperature check on Sunday night is a Monday morning of flat beer and lost covers. A missed fridge check on Friday close is a Saturday morning of stock in the bin. Opening — the six that always matter

Fridge and freezer temperatures (before anything else — a fail here changes the day). Cellar temperature and line status. Till float and safe count. Cleaning verification from the previous close. Waste bin status. Alarm and fire-door state. Everything else is nice-to-have; these six determine whether you can open safely and legally.

Closing — the six that stop tomorrow's fires

All fridges closed and full (a door left ajar overnight loses everything). Cellar gas turned off. Waste out and bin lids secured (fly-tipping risk otherwise). Cash counted, banked or safely stored. Cleaning schedule signed off. Alarm set, doors locked, lights off. Photograph the state of the venue on closing — five phone photos take 90 seconds and end 'who left the fryer on' arguments forever.

Photo-evidence beats memory

The single biggest upgrade to shift checks in the last decade is smartphone photos attached to the checklist. Temperature readings, cellar gauges, safe counts, cleaning verifications — a photo takes three seconds and produces evidence a supervisor can review remotely. Photo-attached checks catch fabricated sign-offs within a fortnight.

The escalation nobody builds

A failed check needs a defined next action. 'Fridge at 8°C' is not a check outcome; 'fridge at 8°C, moved stock to spare fridge, engineer called, GM notified' is. Bake the escalation into the checklist so the shift supervisor knows exactly what to do without a phone tree — 80% of check-related crises come from ambiguous escalation, not from the underlying fault.
